
My favorite Greek God after Nia Vardalos is Dionysus. He is the god of wine, parties, festivals, madness, drunkenness, and pleasure. And my personal hero. Why would anyone want to be any other god? Imagine being the god of wine and parties? You would get some Greek Saganaki every night. The Greeks claim to be the creators of all these wonderful dishes in Eastern Europe, but tell any Eastern European that and you will most likely get captured and sold to some Arab as his sex slave for the rest of your life. A dream for some of my friends, but a nightmare for most.
This is a nice simple, light, and refreshing summer salad. It’s not Greek, but just slightly influenced by them. Great for summer picnics!
1 Pint Grape Tomatoes – Sliced in Half
1/4 White Onion – Sliced
1/2 Pound French Feta Cheese – Cubed
1/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
2 Tablespoons Mayonnaise
1 Teaspoon Dijon Mustard
2 Tablespoons Dill – Finely Chopped
Add all of the liquid ingredients in a bowl with the salt and pepper and whisk for 30 seconds. Add all the remaining ingredients and fold until fully incorporated. Refrigerate for at least 30 minutes before serving.
